1 cup organic extra virgin olive oil, first cold press (or oil of your choice)
1/4-1/3 cup balsamic vinegar, adjusted to your taste (red wine or other vinegar work too)
1 large clove crushed garlic
1 t salt (or less if using sea salt)
2 t Dijon mustard
For an interesting variation, use dark sesame oil and rice vinegar. Use fresh ground ginger in place of mustard.
Shake ingredients well in a glass jar. Does not need to be refrigerated. Enjoy!!
